1. 5 Minute Protein Packed Oats

All you need to do is mix 1/2 cup of quick cooking oats, 1/2 cup of unsweetened non-dairy milk , 3/4 cup of egg whites, and a dash of cinnamon in a microwave safe bowl, and stir. Microwave for about 3 minutes, being sure to stir every 30 seconds. Top with any toppings you like. I love topping my protein oats with shredded coconut, flax seeds, and some fresh fruit.

2. Single Serve Muffin

Are sugary muffins a staple on the go breakfast for you? I have the most delicious single serve muffin that you can prep in under 10 minutes for an easy on the go breakfast. Here’s what you’ll need.  1 tablespoon of coconut flour, 1 tablespoon of almond meal, 1/2 tsp. baking powder, 1 Tbsp. pure maple syrup, 1 egg, 1 Tbsp. melted coconut oil, 1 Tbsp. non dairy milk, and 2 Tbsp. blueberries. To make, all you need to do is mix all of the dry ingredients together, and then add in the coconut oil, maple syrup, non dairy milk, and egg. Fold in the berries and pour into a microwave safe ramekin dish, or mug. Microwave on high for 50 seconds or longer if needed depending on your microwave.

3. Overnight Oats

This is pretty much the easiest and healthiest option for super busy people! All you need to do is mix 1/2 cup of rolled oats with 1 cup of unsweetened non-dairy milk of choice, and 1 Tbsp. of chia seeds. Let this sit overnight, and it the morning top with your favorite toppings. I recommend topping your overnight oats with some sliced banana or  berries, a drizzle of honey, and some cocoa nibs for a deliciously easy breakfast.

4. Egg scramble

Scrambled eggs never get old, and they are an easy staple breakfast recipe. To make a quick and healthy egg scramble, whisk together 2 eggs with chopped veggies , a dash of unsweetened non-dairy milk, and a tablespoon of shredded cheddar or vegan cheese. Just blend it all together. This is a convenient, and delicious breakfast to get your day started on the right foot.
