7 Quick and Easy Breakfast Recipes

1. 5 Minute Protein Packed Oats
If you love oats, and you have 7 extra minutes to spare, this may be the oatmeal recipe for you. All you need to do is mix 1/2 cup of quick cooking oats, 1/2 cup of unsweetened non-dairy milk , 3/4 cup of egg whites, and a dash of cinnamon in a microwave safe bowl, and stir. Microwave for about 3 minutes, being sure to stir every 30 seconds. Top with any toppings you like. I love topping my protein oats with shredded coconut, flax seeds, and some fresh fruit.
2. Single Serve Muffin
Are sugary muffins a staple on the go breakfast for you? I have the most delicious single serve muffin that you can prep in under 10 minutes for an easy on the go breakfast. Here’s what you’ll need. 1 tablespoon of coconut flour, 1 tablespoon of almond meal, 1/2 tsp. baking powder, 1 Tbsp. pure maple syrup, 1 egg, 1 Tbsp. melted coconut oil, 1 Tbsp. non dairy milk, and 2 Tbsp. blueberries. To make, all you need to do is mix all of the dry ingredients together, and then add in the coconut oil, maple syrup, non dairy milk, and egg. Fold in the berries and pour into a microwave safe ramekin dish, or mug. Microwave on high for 50 seconds or longer if needed depending on your microwave.
3. Overnight Oats
Here’s a recipe that you can prep the night before that takes virtually no time to prepare in the morning. This is pretty much the easiest and healthiest option for super busy people! All you need to do is mix 1/2 cup of rolled oats with 1 cup of unsweetened non-dairy milk of choice, and 1 Tbsp. of chia seeds. Let this sit overnight, and it the morning top with your favorite toppings. I recommend topping your overnight oats with some sliced banana or berries, a drizzle of honey, and some cocoa nibs for a deliciously easy breakfast.
4. Egg scramble
Scrambled eggs never get old, and they are an easy staple breakfast recipe. To make a quick and healthy egg scramble, whisk together 2 eggs with chopped veggies , a dash of unsweetened non-dairy milk, and a tablespoon of shredded cheddar or vegan cheese. Cook as you would traditional scrambled eggs, and serve with a slice of gluten free or whole grain toast.
5. Strawberry Smoothie
Smoothies can always be used as a quick go to breakfast when you are running short on time. It only takes about 5 minutes to toss everything into a blender, and go. To kick start your day, try blending up a quick smoothie. Add some frozen strawberries, a frozen banana, some ground flax seeds, hemp seeds, cocoa powder, raw honey, and your favorite protein powder together with some almond or coconut milk. This smoothie is packed with protein, healthy fats, and healthy carbohydrates to fuel your morning, and get you out the door with some extra energy!
6. Cocoa Cottage Cheese
If you’re looking for a decadent treat for breakfast that doesn’t ruin your healthy eating plan, try this delicious cocoa cottage cheese breakfast recipe. This recipe is perfect for chocolate lovers. You can now have chocolate for breakfast without the guilt! This breakfast is super simple. Simply combine 1/2 cup of cottage cheese, 2 tsp. of unsweetened cocoa powder, and 1 tsp. of pure maple syrup. This is a protein-rich way to start your day. Pair this with some fresh fruit for a perfect balance of protein, fats, and carbs .
7. Chunky Monkey Shake:
This is a delicious way to start any day. To make a delicious, and creamy chunky monkey shake you will only need a handful of ingredients. All you need is 1 cup of unsweetened nut milk of choice, 1 frozen banana, 1 tablespoon of unsweetened cocoa powder, a scoop of your favorite protein powder, and a tablespoon of peanut butter. Just blend it all together. This is a convenient, and delicious breakfast to get your day started on the right foot.
